Celery Salad with Peanuts

Celery is the perfect vehicle for a salty, assertive dressing like this one. Chili and peanuts make this dish that much more addictive.
Celery Salad with Peanuts
Ingredients:
3 tablespoons EVO
2 tablespoons fresh lemon juice
2 teaspoons fish sauce
6 stalks Organic Celery SIPO , thinly sliced on a diagonal
3 shallots thinly sliced
1 Red Cornetto Chilli SIPO, thinly sliced
1 cup fresh Coriander leaves SIPO with tender stems
¼ cup chopped roasted, salted peanuts
Preparation:
Step 1
Whisk together oil, lime juice, and fish sauce. Toss with celery, scallions, chile, cilantro, and peanuts.
